Add This Chicken Enchilada Casserole To The Table In Under An Hour

I love Mexican food. Honestly, I could eat Mexican every night of the week and my kids are the same way. So, I have been looking for some great Mexican type dishes to prepare at home. I mean, I love my local Mexican restaurant but who can afford to eat out all of the time? I am so thrilled to have found this chicken enchilada casserole. It is so easy to make and so delicious and my entire family loves it.

Really, what’s not to love? With chicken breast, tortillas – or lavash bread – cumin, garlic and a few other yummy spices, this is quickly going to become your favorite Mexican casserole. It only takes 10 minutes to get this one ready for the oven and then it takes less than an hour to bake to perfection. You could serve this alongside your other homemade Mexican dishes, like these black bean flautus, or just serve it on its own. It’s delicious either way.

Even if you don’t typically do casseroles, you are going to want to check this one out. It serves eight so it’s great for big gettogethers and if you just have a few people at your house, the leftovers are also great for lunch the next day – assuming you will have leftovers. This is the easiest and most delicious Mexican casserole that I have ever made and I am already planning to make it again. Plus, it serves up great with this homemade guacamole.
